Super Bowl 2014: Appetizer Ideas

I am not a sports fan – I have never been, and other than the Detroit Pistons, there are no professional teams that interest me. Super Bowl weekend events and parties are not one of my favorite activities. I can’t sit around the television all day – it bores me to tears.

I would mix yummy with healthy if I were hosting a Super Bowl party. And, of course, try to keep the prep work as easy as possible. Here’s the list of Super Bowl appetizer ideas:

1. Cheese platter with grapes, salami, and walnuts (instead of crackers, slice some apples)

2. Stuffed cucumbers 

3. Sliders – everyone loves them; use the Hawaiian rolls for buns and tear out a little of the bread in the center, or even better, served them open-face (they are bite-sized anyway).

4. Vegetable tray with hummus, salsa, garlic, and white bean dip (no bread)

5. Pigs in a blanket  (serve with a good deli-style mustard on the side)

6. Baked chicken tenders; these are delicious! (I use drumsticks which make an excellent lunch for my husband, George.)

7. Grilled cheese sandwiches cut in quarters (you can easily make a gluten-free version as well.) Use a good cheese such as gruyere (you can also add thinly sliced tomatoes).

8. Ham and Endive Spears: Dice 1/4 pound diced ham, 2 scallion whites, mix 2 tablespoons mayonnaise (or cream cheese or mascarpone), and 1 tablespoon mustard. Spoon onto endive spears. Top with sliced scallions.

9. Stuffed mushrooms: Remove the stems from small cremini or white mushrooms. Sprinkle the caps with salt and pepper and fill with one teaspoon of cream cheese. Broil until the cheese is melted and browned in spots, about 8 minutes. Top with chopped chives.
